Greek Chicken W Lemon & Mint - 2g Carbs, 0.5g Fiber

This easy oven-baked chicken recipe is delicious served with
brown rice or couscous and steamed veggies!
Servings: 4
Prep Time: 10 min
Cook Time: 1 hr
Total Time: 1 h 10 min

3 Tbsp lemon peel, grated
3 Tbsp fresh mint, chopped
1 Tbsp fresh oregano, chopped
1 1/2 Tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper, coarsely ground
3 cloves garlic, minced
24 oz chicken breast halves, 4 (6 oz)

1. Preheat oven to 375 degrees F.

2. Combine first 7 ingredients in a small bowl. Spread mixture under
skin of each chicken breast.

3. Bake chicken at 375 degrees F for 1 hour or until done. Remove
and discard skin before eating.
