Mango Pear Soup
2 very ripe mangoes
2 very ripe pears
1/2 cup pear juice
2 teaspoons grated ginger
1 teaspoon grated lemongrass
1 small avocado, finely diced
1 plum tomato, finely diced
2 tablespoons creme fraiche
juice of half a lime
Salt and pepper to taste
1. Peel and core the mangoes and pears, then place in a blender. Add pear juice and puree until smooth. Add the ginger and lemongrass, and blend. Adjust seasoning with salt and pepper. If soup is too thick, add a little water or splash of white wine to thin it out.
2. In a small bowl, place avocado and tomato and toss with salt and pepper. In a separate bowl, mix the creme fraiche and lime juice. Season with salt and pepper.
3. Ladle soup into six chilled soup bowls. Place a dollop of the creme fraiche mixture in the center of each bowl and a spoonful of avocado tomato mixture on top. Serve immediately.
