Servings: 4-6
6 cups romaine lettuce
2 Roma tomatoes, chopped
2 green onions, chopped
1 avocado (use melon baller)
1/2 cup chopped cucumber, (optional)
1/2 yellow pepper, chopped
2 Tbsp crumbled Feta cheese
Cut romaine lettuce into ribbons. Rinse thoroughly and spin dry in
salad spinner. Place in large glass salad bowl. Arrange tomatoes,
green onions, avocado, cucumber (if using), and yellow pepper on
top. Do not toss. Sprinkle with Feta cheese. Serve with dressing
of choice.
